Method
Brown veal shanks in oil, remove. Sauté onion, carrot, celery. Add wine, reduce. Return shanks with stock, tomatoes, herbs; braise covered 1.5-2 hours until tender. Finish with gremolata (parsley, lemon zest, garlic).
