Saganaki (Pan-Fried Cheese)
| 250 | g | kefalotyri or kefalograviera cheese |
| 3 | tbsp | all-purpose flour |
| 2 | tbsp | extra-virgin olive oil |
| 1 | tbsp | lemon juice |
| 0.25 | tsp | dried oregano |
| 0.25 | tsp | black pepper |
Method
Cut cheese into 1–1.5 cm thick slabs. Dust lightly with flour. Heat olive oil in a small skillet over medium-high. Fry cheese 1–2 minutes each side until golden. Drain briefly, finish with lemon juice, black pepper, and a sprinkle of oregano. Serve immediately with lemon wedges.
